Chicken Momos Recipe With Momos Sauce

You know whether it’s Japanese food, Thai food, or any Oriental cuisine, they do have dumplings!

Right?

Whether it is dimsums or gyoza, or we do have one of our own dumplings, which we can call our own! Which came to use via Tibet, That is Momos. And I get a lot of requests on how to make good chicken momos! So here I will share a not only chicken momos recipe but also shares you some knowledge about it.

I traveled a lot in Ladakh for food and I realized that at least in Ladakh no one makes momos using only refined flour (all-purpose flour). That I think, is a very urban thing. Over there the momos are made with a combination of wheat flour and refined flour or of only wheat flour. So, I am going to do a mixture of refined flour and wheat flour.

This culture of dumplings, of stuffing things inside dough then steaming or frying them, this typically originates in China.

Right!

China has Jiaozi, from which may be the Japanese took “Gyoza”. Then at the bottom, there’s dimsum. And all this influenced Tibet to create there own rustic version of a dumpling.

Like it influenced the Mongolians to create the “Mantoo”. Which went all the way to Turkey to become “Manti”. So momos have been going on like that. But, “Wheat” was a difficult commodity to get, in Tibet. Which is why even today the old Tibetans who have come from Lhasa they say that they don’t make momos every day. It was only made during Losar or special days when they had enough wheat to make and time to celebrate. Otherwise, momos are not everyday food as we think they are.

You know, some people say that the origin of momos is from Nepal. It is not from Nepal but Nepal has definitely made momos famous. Momos originally are from Tibet. In Nepal, there are merchants called Newari. They live in Kathmandu. They used to trade a lot with Lhasa. So when they would go to Lhasa they would bring back a lot of things and they also picked up the technique of making momos. And even today momos are made in the house of Newari merchants. And it is said that they made momos famous in the world, at least made them famous in Nepal. That is the only conceivable, true history of momos, that you can make sense of.

Steps For Making Chicken Momos Recipe At Home With Sauce

Equipment

  • Momo Steamer
  • Pan

Ingredients
  

Momos Filling

  • 300 gm Chicken Minced
  • 1 Medium Onion chopped
  • 2 tbsp Ginger Garlic Paste or use finely chopped
  • 1 tbsp Soya Sauce
  • 1 tbsp Coriander Leaf finely chopped
  • ½ tbsp Black Pepper Powder
  • Salt to taste

Momo Dough

  • 1 cup Whole Wheat Flour
  • 1 cup All-purpose Flour Maida
  • Salt to taste
  • Water as required

Momos Dipping Sauce

  • 10 Dry Red Chili
  • 3-4 Tomatoes cut into 4 pieces
  • 1 tbsp Oil
  • 2 tbsp Garlic finely chopped
  • 1 tbsp Ginger finely chopped
  • 1 tbsp Onion finely chopped
  • 1 tbsp Vinegar
  • 1 tbsp Soya Sauce
  • 2 tbsp Tomato Sauce
  • 1 Cup Water
  • Salt to taste

Instructions
 

For Dough

  • In a bowl add wheat flour, all-purpose flour, salt, water and make a nice soft dough.
  • Now leave it for rest 15-30 minutes.

For Momos Filling

  • In a bowl add chicken minced, onion, ginger garlic paste, soya sauce, coriander leaves, black pepper powder, salt and mix it well.
  • Now momos filling is ready.

Cooking Process

  • After resting a dough, take a small flour and roll out the dough into a disk.
  • Now stuff the filling into it and give any shape.
  • When you making your all momos then steam it for 10 to 15 minutes in a steamer.
  • Now your chicken momos cooked and ready to serve with sauce.

For Momos Sauce Or Chutney

  • Take a pan, add water, tomatoes, red chili and cook it until tomatoes get soft. After that make it a fine paste.
  • Now take another pan, add oil, ginger, garlic, onion, red chili tomato paste and stir it for a minute.
  • Now add soya sauce, vinegar, tomato sauce, salt and cook it for approx 10 minutes on medium-low flame.
  • Now your momos sauce is ready.

Notes

  • For momos dough, I used wheat flour and all-purpose flour but you can also use only all-purpose flour.
  • If you want less spicy momo sauce then you use fewer chilies and also take out the seeds from chilies.
  • We don't cook garlic because we want its raw flavor.
