The story of crispy fried chicken is actually connected to one person named as Colonel Sanders. So Colonel Sanders got into the army, he got into farming. He did a lot of odd jobs and odd businesses. And at the age of 40, he thought of making crispy fried chicken.

Now fried chicken in Kentucky is not a big deal because it is extremely popular in Louisville, Kentucky, and Nashville. And every fried chicken recipe had their own specialty and that specialty was either in the marination or crumb or both.

Now Colonel Sanders decided that his fried chicken was the best. And he also fought for that fried chicken. People said that’s our, his life was full of struggles. And he took his recipe for 1009 times to get it patent. He took his recipe for 1009 times to get franchised. And he got rejected for 1009 times. It was only the 1010 time that Colonel Sanders could create the fried chicken that is known as the crispy fried chicken today. I mean, not just in life but also have to struggle in fried chicken. And it is the 1010 time that mattered and looks at where fried chicken is now.

So one of the best-fried chicken I had was in Louisiana. And there was an old woman, approximately 90 years old. And her restaurant was approximately 60 years old. So she made this amazing recipe of a fried chicken, which was super crispy.

You know for me the story of fried chicken or any marination it’s like saucery. We say that the person who used to mix the masalas was known as magicians because you know a little bit here and a little bit there would never taste the same. And the dish which is based on it would never taste the same. And fried chicken marination is quite like that. Because it’s not like it just has garlic powder, onion powder, ginger powder or chili powder. It’s about how all of them come together. And that is the real saucery of a fried chicken. And the most important part is the ability to give time for the spices to kinda work on.

Steps For Making Crispy Fried Chicken Recipe

Equipment

  • Karahi / Pan
  • Plastic Bag

Ingredients
  

For Brining

  • 1 kg Chicken
  • Buttermilk as required (approx 3 cup)
  • 2 tbsp Hot sauce
  • Salt to taste

For Flour Coating

  • 3 cup All-purpose flour
  • ½ cup Cornstarch
  • 2 tbsp Paprika Powder alternate option degi mirch
  • 3 tbsp Onion powder
  • 3 tbsp Garlic powder
  • 3 tbsp White Pepper powder
  • Salt to taste

For Egg Wash

  • 5 Whole eggs
  • 1 tbsp Garlic powder
  • 1 tbsp Onion powder
  • 1 tbsp Paprika powder (degi mirch)
  • 1 tbsp White Pepper powder
  • Salt to taste

Other

  • Oil for deep fry as required

Instructions
 

For Brining

  • Take a bowl, add chicken pieces, buttermilk, hot sauce, salt and mix it.
  • Now cover that bowl and keep aside for 3-5 hours in the refrigertor.

For Flour Coating

  • Take a plastic bag, add all-purpose flour, cornstarch, onion powder, garlic powder, paprika powder, white pepper, salt and mix it well.
  • Now flour is ready for coating.

For Egg Wash

  • In a bowl, add egg, paprika powder, onion powder, garlic powder, white pepper, salt and mix it.

Coating Process

  • For crispy fried chicken, we use 3 layer coating. Check out the below steps.
  • For The First Coating: Take a chicken piece from marination and dip each piece in flour. Coat well on each and every piece and shake gently to remove excess.
  • For The Second Coating: Take a coated chicken and dip in the egg mixture.
  • For The Third Coating: In a plastic bag, add a coating flour (used in the first coating) and coated chicken piece from an egg and shake well for the third layer or coating. Once done, remove excess flour and put it into hot oil for frying.
  • Now repeat these three steps with every chicken piece and serve it.

Notes

If you don't have plastic bag then you will use lid box or any other box for shaking.
