- 6 tbsp Butter
- 1¼ cup Yellow Onion Chopped
- 1 tbsp Minced Garlic
- 1 cup Diced celery
- 1 cup Carrots Peeled & diced
- 2½ cup Low-sodium chicken broth
- 2 cup Potatoes Peeled & diced
- 2 tsp Minced fresh thyme
- 2 tsp Minced fresh rosemary
- 2 pieces Bay leaves
- Fresh Ground black pepper
- 6 tbsp Flour
- 2 cup Milk
- ½ cup Heavy cream
- 1 cup Peas Frozen or fresh
- 1 cup Frozen corn optional
- 3 cup Cooked shredded chicken
- 3 tbsp Chopped fresh parsley
Steps For Making Chicken Pot Pie Soup
Preheat the large pot by placing it on the burner with medium flame. Then add chopped onion and diced carrot and griddle it for 3 minutes and at the end add garlic to it followed by 1 min griddle.
After that add Low-sodium chicken broth followed by potatoes, rosemary, 2 bay leaves, and salt with pepper according to your taste.
And then after reducing the flame to low-medium press the ingredients down inside the broth and let them boil. For mixing it properly, keep on stirring it with a spoon. Let the potatoes get fully tendered. It generally takes less than 15 minutes.
If you want you can add the peas and corn along with vegetables (only after the potatoes are fully tendered).
Milk Mixture Making
Place the saucepan on medium flame and pour the remaining butter. And along with stirring add flour to it followed by milk to it.
Add salt and pepper to the mixture according to the taste. Keep cooking the mixture until it gets thickened.
