If you don’t have cooked rice then no need to worry at all. The chicken fried rice recipe can be prepared with freshly cooked rice. All you have to do is spread the freshly cooked rice on the baking sheet and freeze them for at least 30 minutes.

Equipment

  • Pressure Cooker / Pot (Kadai)
  • Large pan

Ingredients
  

For Chicken Stock

  • 300 gm Chicken Pieces (with bone)
  • 3 tbsp Ghee Or Oil
  • 6 Black Pepper
  • 1 Black Cardamom
  • Small Cinnamon Stick
  • 2 Bay Leave
  • 1 Liter Water
  • Salt To Taste

For Rice

  • 1 Cup Rice
  • 2 Cup Chicken Stock

For Chicken Fried Rice

  • 2 tbsp Oil
  • 2 tbsp Garlic (fine chopped)
  • 1 tbsp Ginger (fine chopped)
  • ½ Cup Onion (fine chopped)
  • ½ Cup Beans (fine chopped)
  • ½ Cup Capsicum (fine chopped)
  • ½ Cup Carrot (fine chopped)
  • ½ Cup Green Peas
  • 3-4 Eggs
  • Shredded Chicken Pieces (used in stock)
  • Rice
  • 2 tbsp Soya Sauce
  • 1 tbsp Vinegar
  • ¼ tbsp Black Pepper Powder
  • Salt To Taste
  • ¼ Cup Green Onion leaves (chopped)

Instructions
 

For Chicken Stock

  • In a Pot add ghee, chicken, and saute.
  • Add black pepper, black cardamom, cinnamon stick, bay leaves, salt, water, and mix.
  • Now cook it on medium-high flame for 20 minutes and continuously skimming.
  • After 20 minutes chicken stock is ready and now takes out the chicken pieces and shred the chicken from bone and keeps it aside because we are gonna use chicken pieces in fried rice.

For Rice

  • Take rice and wash it a few times.
  • Now in a pot and chicken stock, rice and cook it.

For Fried Chicken

  • In a pan add oil, ginger, garlic, onion, and just quick stir fry.
  • Now add beans, capsicum, carrot, green peas, and again stir it for 1-2 minutes. We don't need to cook the vegetables because we want the crunch.
  • Add egg, salt, black pepper, and cook it. Now add the shredded chicken pieces and stir it.
  • Now add the cooked rice, soya sauce, vinegar and toss it and cook for 2-3 minutes.
  • Add green onion leaves and again toss it. Now chicken fried rice is ready to serve.

Notes

  • Whenever you add soya sauce to the chicken fried rice add it on the rice and not the vegetables. The vegetables should not have a dark color.
  • You can add your favorite vegetables to this.
  • Before adding salt taste it because we already add in chicken stock that we used for making rice.
