Chicken Handi Recipe is a restaurant-style chicken. It is prepared in a unique vessel known as a handi (clay pot). That’s why it is called Handi Chicken or Chicken Handi. It’s a traditional recipe and it is most popular in north India. Those who want to make it at home must know the recipe. You must have knowledge about all the ingredients used in making it.
But before starting this recipe, I want to tell you something.
Here, I like to talk to you about some facts and the importance of making food in a clay pot.
It’s a tremendous benefit of cooking in a clay pot. Clay pots have been around for thousands of years and our ancestors have always used natural products to prepare their food.
Now, let’s start with some of the health benefits of cooking in clay pots. Instead of adding toxic chemicals to your food clay pots actually release natural and beneficial minerals and ions to your food like calcium, sulfur, phosphorous, iron, and magnesium. These are micronutrients that our body required to function properly.

- 3-4 Ladle (Kadchi) Mustard oil
- 1 tbsp Cumin Seeds
- 10-12 Black Pepper
- 2 Green Cardamom crushed
- 2 Black Cardamom crushed
- 3-4 Cloves
- Small Peace of Cinnamon
- 2 Bay Leaves
- 15-20 Garlic Cloves grate (kadukas)
- 2 inch Garlic grate (kadukas)
- 8-9 Medium Onions cut into slices
- 3 tbsp Chicken Masala
- 1 tsp Turmeric Powder
- 1 tbsp Red Chilli Powder
- 1 tbsp Coriander Powder
- Salt to taste
- 750 gm Chicken Pieces
- 1 tsp Garam Masala
- Coriander Leaves Chopped
Instructions
Steps For Making Handi Chicken
- Take a clay pot and add mustard oil to it. Now you have to turn on the gas.
- When the oil is hot, put cumin seeds, black pepper, green cardamom, black cardamom, cloves, cinnamon, bay leaves and stir it.
- Add ginger, garlic and stir it for 1 minute.
- Now add sliced onions and stir it for 1-2 minutes.
- Add turmeric powder, red chilli powder, coriander powder, garam masala, salt and stir it.
- Now add chicken pieces and mix them. Now cover it and leave it for 8-10 minutes.
- Now stir it and again leave it for 8-10 minutes and then add chicken masala and stir it and cover it for again 6-7 minutes.
- Now add chopped green coriander leaves and it's ready for serve.

Notes
- If you are using a clay pot the first time then you need to soak in water for 10-12 hours before using it. After soaking leave it to dry for 2-3 hours.
- Do not put the clay pot on a gas flame before pouring oil.
- Cook it only in slow flame. Don't use high or medium flame.
